1 pound Lamb
1 dash Kosher Salt and Freshly Ground Black Pepper
2 tablespoon Mayonnaise
2 teaspoon Fresh Herbs
2 teaspoon Yellow Mustard

STEP 1
Preheat the oven to 475 degrees F (250 degrees C).
STEP 2
Place Lamb (1 pound) on a parchment-lined (for easy clean-up) rimmed baking sheet. Season with Kosher Salt and Freshly Ground Black Pepper (1 dash) on all sides.
STEP 3
Mix together Mayonnaise (2 tablespoon), Yellow Mustard (2 teaspoon) and Fresh Herbs (2 teaspoon). Spread in an even layer across the rack of lamb — you might not need it all.
STEP 4
Place pan in the oven. Bake for 10 minutes, reduce heat to 400 degree F (200 degrees C) and bake for 10 more minutes.
STEP 5
Take pan out of the oven and place lamb on a board to rest. Let rest for at least 10 minutes. Cut and serve.
