Lamingtons are a traditional Australian dessert. This simplified recipe is made with bought sponge cake, sandwiched together with strawberry jam, then dipped in a thin chocolate sauce. A final dusting with desiccated coconut and this Aussie icon is complete - give it a go!

Sponge Cake
1 cup
Strawberry Jam
3 cups
Powdered Confectioners Sugar
2 Tbsp
Unsweetened Cocoa Powder
2 cups
Unsweetened Shredded Coconut

Step 1
Slice the Sponge Cake (2) into four pieces. Spread a generous portion of Strawberry Jam (1 cup) onto each one. Place the top of sponge cake on top and use a sharp knife to cut them into square. Set aside
Step 2
Make the chocolate icing: Sift Powdered Confectioners Sugar (3 cups) , Unsweetened Cocoa Powder (2 Tbsp) into a large mixing bowl. Add Vanilla Extract (1 tsp) and warm water and mix everything together.
Step 3
Use a fork to pick up one cake and get it coated with the chocolate icing, and drip of the excess. Then place it into the Unsweetened Shredded Coconut (2 cups) and cover it with coconut. Place the cake on a rack. Continue with the rest. Serve and enjoy!
