Preheat the oven to 425 degrees F (220 degrees C).
Potatoes (2 lb)
Put them on a plate and cook them in a microwave oven for 10 minutes.
While microwaving the potatoes, put
Garlic (3 cloves)
Dijon Mustard (3 Tbsp)
Italian Seasoning (1/2 Tbsp)
Olive Oil (3 Tbsp)
Salt (to taste)
Ground Black Pepper (to taste)
and mix it together.
Transfer the potatoes to a big bowl, add the dressing and mix it together.
Evenly space them on a rimmed baking sheet.
Bake the potatoes for 35 to 40 minutes. When it reaches the half time, take a spatula and flip them so they can get crispy on both sides. Serve and enjoy!
