Preheat the oven to 425 degrees F (220 degrees C).
Cut Potato (2 pound) into wedges. Put them into a plate to microwave them for 10 minutes.
While microwave the potatoes, put Garlic (3 clove), Dijon Mustard (3 tablespoon), Italian Seasoning (2 teaspoon), Olive Oil (3 tablespoon), and Salt and Pepper (to taste) and mix it together.
Transfer the potatoes to a big bowl, add the dressing and mix it together.
Put them on a pan lined with baking sheet.
Bake the potatoes for 35 to 40 minutes. When it reach the half time, take a spatula and flip them so they can get crispy on both side. Serve and enjoy!
