Preheat oven to 210 degrees F (100 degrees C).
Line a couple of baking sheets with parchment paper.
Into the bowl of a stand mixer, add the Egg (6) whites along with the Vanilla Extract (2 teaspoon) and Salt (1 pinch). Whisk at medium speed until mixture forms soft peaks.
Increase the speed to high and add in the Caster Sugar (1 1/2 cup) a spoonful at a time. Whisk until the sugar is all incorporated, around 3-5 minutes. Meringue is whisked well when you can rub a bit between your fingers and it feels smooth and not gritty.
Add Green Food Coloring (1 drop) and mix to combine. Transfer meringue into a piping bag fitted with a star nozzle. Form roses on the baking sheets. Bake for 2 hours.
Allow to cool completely before serving. You can store them in air tight containers or serve immediately. Enjoy!
