Preheat oven to 210 degrees F (100 degrees C).
Line a couple of baking sheets with parchment paper.
Into the bowl of a stand mixer, add the
whites along with the
Vanilla Extract (1/2 Tbsp)
Salt (1 pinch)
. Whisk at medium speed until mixture forms soft peaks.
Increase the speed to high and add in the
Caster Sugar (1 1/2 cups)
a spoonful at a time. Whisk until the sugar is all incorporated, around 3-5 minutes. Meringue is whisked well when you can rub a bit between your fingers and it feels smooth and not gritty.
Green Food Coloring (1 drop)
and mix to combine. Transfer meringue into a piping bag fitted with a star nozzle. Form roses on the baking sheets. Bake for 2 hours.
Allow to cool completely before serving. You can store them in air tight containers or serve immediately. Enjoy!
