Place the Water (2 1/2 cup), Granulated Sugar (1/2 cup), Matcha Powder (2 teaspoon), Fresh Ginger (1 teaspoon), Ground Nutmeg (1 teaspoon), Whole Clove (1/2 teaspoon), Ground Cardamom (1/2 teaspoon), and Cinnamon Stick (1) in a small sauce pan and mix together. Place over medium heat and bring to a simmer. Simmer together for 10 minutes and the remove from the heat to cool.
Use about 1/2 cup matcha chai mixture to each 1/3 cup of the Whole Milk (2 cup) for each latte. Froth if desired. Add more or less milk to taste.
Sprinkle top with a pinch of matcha.
