In a large bowl, add Butter (1 stick), Graham Crackers (14), Granulated Sugar (1/4 cup), and mix it together. Take a 9 inch springform pan, place the crumbs in there and use hand to form a crust.
Add Cream Cheese (8 ounce) in a stand mixer and beat it well. Then, add Granulated Sugar (1 cup) for 2 minutes.
Add Sour Cream (8 ounce), Vanilla Bean Paste (2 teaspoon), Salt (1/4 teaspoon), Lemon (1) and mix it together. Add Large Egg (4) one at a time.
Pour it in the pan and bake at 325 degrees F (160 degrees C) for 1 hour 20 minutes.
Cool completely before putting it in the fridge for 6 hours.
Take a saucepan and add Raspberry Jam (12 ounce) and heat it up in medium heat. Toss together the jelly with Fresh Raspberries (6 ounce) and pour on top of the cheesecake.
