Raw Cacao Butter

Cashew Nuts
, soaked

Raw Honey
or Maple syrup or agave syrup

Vanilla Bean Powder
or Vanilla extract
Cooking Instructions
1.
Set up a double boiler on a burner over medium low heat (a heat safe bowl over a saucepan filled with about 1 inch of water).
2.
Add Raw Cacao Butter (1 cup) to double boiler and stir occasionally until melted.
3.
While the cacao butter is melting, add Cashew Nuts (1/2 cup) to a high speed blender and blend until finely chopped.
4.
Once cacao butter is melted, add in Raw Honey (10 tsp) and Vanilla Bean Powder (as needed) stir to combine and then add mixture to blender.
5.
Blend on high until very smooth.
6.
Pour the mixture into a medium sized dish lined with parchment paper.
7.
Place in the refrigerator until set (this typically takes about 1 hour).
8.
Remove white chocolate from parchment, store in an airtight container in a cool, dry place.
