Healthy take on a not so healthy favorite - peanut butter cups! These delicious small desserts are made with almond meal, oat flour, peanut butter, maple syrup and cocoa.
Add Almond Meal (1 cup) and Old Fashioned Rolled Oats (1 cup) into a high-speed blender and blend on high until a flour forms.
STEP 2
Dump into a large bowl and break up any clumps with your fingers.
STEP 3
Add the Peanut Butter (4 tablespoon), Coconut Oil (3 tablespoon), Pure Maple Syrup (2 tablespoon), Ground Cinnamon (1/2 teaspoon), Pure Vanilla Extract (1/2 teaspoon), and Fine Sea Salt (1 pinch) into the bowl. Stir until thoroughly combined. The dough should be fairly sticky like cookie dough.
STEP 4
Line a mini (or regular) muffin tin with paper liners or use a silicone muffin holder. Portion the dough into each muffin cup and press down until even and smooth.
STEP 5
To make the chocolate sauce: Whisk together the Coconut Oil (6 tablespoon), Pure Maple Syrup (1/4 cup), Unsweetened Cocoa Powder (1/4 cup), Dark Chocolate (2 ounce), and Fine Sea Salt (1/4 teaspoon) until no clumps remain.
STEP 6
Spoon the sauce over top each of the cups, distributing evenly. Garnish cups with sliced almonds if desired.
STEP 7
Place in the freezer in a flat area for 30-45 minutes, until firm. Pop out the cups & enjoy immediately! These are best consumed straight from the freezer.
