Makes 2 cups of Doodh Masalaa.

step 1
To make the doodh masala, add Raw Almonds (2 Tbsp), Raw Cashews (2 Tbsp), Shelled Unsalted Pistachios (2 Tbsp), and Pepitas (2 Tbsp) to a small skillet over medium heat. Toast for 4 minutes while mixing occasionally.

Pour the nuts into a blender. Add Cardamom Seeds (as needed), Fennel Seeds (as needed), and Black Peppercorns (2) to the skillet and toast for 1 minute.

Pour the whole spices into the blender as well. Add Saffron Salt (1 pinch), Ground Turmeric (as needed), Ground Nutmeg (as needed), and Granulated Sugar (4 tsp). Blend until you have a fine powder, about 1 minute. Pour the powder into a jar and set it aside.

When ready to make your Masala Doodh, just add 1 -2 Tbsp of the doodh masala to your Milk (to taste) (or non-dairy milk) in a saucepan and heat up until the milk is hot. Pour into a cup and enjoy!
