Step 1
Preheat oven to 375 degrees F (190 degrees C).
Step 2
In a bowl mix Unsalted Butter (1 cup) , All-Purpose Flour (1/2 cup) , Quick Cooking Oats (1 cup) , Brown Sugar (1/2 cup) , Granulated Sugar (1/4 cup) , Baking Soda (1/2 tsp) , Vanilla Extract (1/2 tsp) , and Kosher Salt (1/4 tsp) .
Step 3
Place 1/2 cup of the mixture into a bowl and set aside.
Step 4
Place piece of parchment paper into a 9"x13 " glass baking dish. Spread rest of the mixture into bottom of the dish, pressing into the corners.
Step 5
Bake for 10 minutes in preheated oven.
Step 6
Allow it to cool for 10 minutes (this lets you spread out the preserves better).
Step 7
Spread Raspberry Preserves (1/2 cup) on top, and sprinkle with the remaining 1/2 cup crumbs. Bake for 15-18 Minutes, until the top is nice and evenly brown.
Step 8
Allow the bars to cool, then pull them out of the dish and cut into bars. Serve and enjoy!
