Raspberry Oat Bars

Salty and sweet with crisp edges and a nice chewy middle, these Raspberry Oat Bars are what you need to bake for your next get together.

1 cup Quick Cooking Oats
1/2 cup Brown Sugar
1/4 cup Granulated Sugar
1/2 tsp Baking Soda
6 oz Raspberry Preserves

STEP 1
Preheat oven to 375 degrees F (190 degrees C).
STEP 2
In a bowl mix Unsalted Butter (1 cup), All-Purpose Flour (1/2 cup), Quick Cooking Oats (1 cup), Brown Sugar (1/2 cup), Granulated Sugar (1/4 cup), Baking Soda (1/2 tsp), Vanilla Extract (1/2 tsp), and Kosher Salt (1/4 tsp).
STEP 3
Place 1/2 cup of the mixture into a bowl and set aside.
STEP 4
Place piece of parchment paper into a 9"x13 " glass baking dish. Spread rest of the mixture into bottom of the dish, pressing into the corners.
STEP 5
Bake for 10 minutes in preheated oven.
STEP 6
Allow it to cool for 10 minutes (this lets you spread out the preserves better).
STEP 7
Spread Raspberry Preserves (6 oz) on top, and sprinkle with the remaining 1/2 cup crumbs. Bake for 15-18 Minutes, until the top is nice and evenly brown.
STEP 8
Allow the bars to cool, then pull them out of the dish and cut into bars. Serve and enjoy!
