Best Ever Bacon Cheese Frittata

Ever need a recipe that you can just throw together without big expense in both effort & funds? This incredibly delicious Bacon Cheese Frittata is exactly what you need! Packed with some serious flavour, this fantastic cheap eats dish fills a hole and then some. A perfect mid week meal or dinner party starter. Added bonus? It’s naturally gluten free!

200 milliliter Milk
to taste Salt
6 halved Cherry Tomato

STEP 1
Firstly line your baking dish with baking paper and preheat your oven to 375 degrees F (190 degrees C).
STEP 2
To cook the bacon, cover a baking tray in foil and evenly lay out the Smoked Bacon (8 slice). Place into the oven to cook until the fat is starting to become crisp, approximately 15-20 minutes. Turn them all over after about 10 minutes to ensure even cooking.
STEP 3
Allow to cool for a few minutes, then roughly chop into pieces.
STEP 4
Next, beat together the Milk (200 milliliter) and Egg (8) in a large mixing bowl.
STEP 5
Then mix in the Chopped Bacon, Aged Cheddar Cheese (50 gram), Fresh Chives (1 tablespoon) and a good pinch of Salt (to taste).
STEP 6
Next, pour the mixture into your prepared dish. If you need to, spread the bacon pieces out a little with a fork. Now scatter over the remaining Aged Cheddar Cheese (25 gram) and dot the Cherry Tomato (6) on the top facing upwards.
STEP 7
Finally, bake in your preheated oven for 30-35 minutes until it’s puffed up and golden on top. Allow to cool for a couple of minutes before slicing.
STEP 8
Serve with a side salad or some potatoes. Alternatively, you could allow it to cool completely in the dish then wrap up, refrigerate & take on your next picnic.
