1 bag of frozen straight cut fries
1 Tbsp
Coconut Oil
1/2 Tbsp
Curry Powder
1/2 tsp
Ground Coriander
to taste
Curry Powder
to taste
Cayenne Pepper

Step 1
Preheat your oven to 450 degrees F (230 degrees C).
Step 2
Place Yukon Gold Potatoes (5) matchsticks in a large bowl and add cool water to cover completely. Toss the potatoes and let sit for 5 mins.
Step 3
Then drain the potatoes and "wash" with cold water. This will remove some of the starch. Drain and allow to drip dry.
Step 4
Toss dry potatoes with Coconut Oil (1 Tbsp) , Curry Powder (1/2 Tbsp) Sea Salt (1 tsp) , and Ground Coriander (1/2 tsp) and arrange in a single layer on the prepared baking sheet.
Step 5
Bake until golden and crisp, about 35-40 minutes.
Step 6
Remove from baking sheet and sprinkle with some Cayenne Pepper (to taste) and additional Curry Powder (to taste) .
