Preheat your oven to 450 degrees F (230 degrees C).
Yukon Gold Potatoes (5)
matchsticks in a large bowl and add cool water to cover completely. Toss the potatoes and let sit for 5 mins.
Then drain the potatoes and "wash" with cold water. This will remove some of the starch. Drain and allow to drip dry.
Toss dry potatoes with
Coconut Oil (1 Tbsp)
Curry Powder (1/2 Tbsp)
Sea Salt (1 tsp)
Ground Coriander (1/2 tsp)
and arrange in a single layer on the prepared baking sheet.
Bake until golden and crisp, about 35-40 minutes.
Remove from baking sheet and sprinkle with some
Cayenne Pepper (to taste)
Curry Powder (to taste)
