Combine Dry Wheat Berries (1 cup) and Water (2 cup) in a 2 quart pot over medium heat, bring to a boil and let simmer until wheat berries are tender, about 1 hour.
Drain wheat berries, then transfer to a medium bowl.
Add Apple (1), Dried Cranberries (1/4 cup), Walnut (1/4 cup), and Scallion (2) in a bowl with wheat berries.
Prepare dressing by whisking juice and zest from Lemon (1), Olive Oil (1/4 cup), and Salt and Pepper (to taste) until combined.
Add dressing and Fresh Mint (1 tablespoon) just before serving. Enjoy!
