Combine Dry Wheat Berries (1 cup) and Water (2 cups) in a 2 quart pot over medium heat, bring to a boil and let simmer until wheat berries are tender, about 1 hour.

Drain wheat berries, then transfer to a medium bowl.

Add Apple (1), Dried Cranberries (4 Tbsp), Walnuts (4 Tbsp) and Scallion (1 bunch) in a bowl with wheat berries.

Prepare the dressing by whisking juice and zest from Lemon (1), Olive Oil (4 Tbsp), Salt (to taste), and Ground Black Pepper (to taste) until combined.
