Step 1
Combine
Dry Wheat Berries (1 cup)
and
Water (2 cups)
in a 2 quart pot over medium heat, bring to a boil and let simmer until wheat berries are tender, about 1 hour.
Step 2
Drain wheat berries, then transfer to a medium bowl.
Step 3
Add
Apple (1)
,
Dried Cranberries (1/4 cup)
,
Walnuts (1/4 cup)
and
Scallions (1 bunch)
in a bowl with wheat berries.
Step 4
Prepare the dressing by whisking juice and zest from
Lemon (1)
,
Olive Oil (1/4 cup)
,
Salt (to taste)
, and
Ground Black Pepper (to taste)
until combined.
Step 5
Add dressing and
Fresh Mint (1 Tbsp)
just before serving. Enjoy!
