Preheat your oven to 400 degrees F (200 degrees C).
Heat a non-stick oven-proof frying pan over medium heat.
When the pan is hot, add in the Olive Oil (1 tablespoon) and the Onion (1). Fry for a few minutes until softened and starting to turn golden. Then add in the Garlic (2 clove) and continue cooking, stirring constantly, for 1-2 minutes.
Add in Red Chili Pepper (1), Harissa Paste (2 tablespoon), and the Smoked Paprika (1/2 teaspoon) and give it a really good stir. Fry for approx 5 minutes until the pepper starts to soften a little.
Pour in the Diced Tomatoes (1 can) and give it a really good mix. Simmer for 5-10 minutes until it’s nice and thick. Season to taste with Salt (to taste).
Then you can do one of two things. Either leave the tomatoes in your oven proof pan and crack over Egg (2) or you can split it between two oven proof dishes or small cast iron pans and crack an egg into each one.
Bake in the centre of the preheated oven for 6-8 minutes until the egg is cooked to your liking. Serve immediately.
If you like you can sprinkle over some Fresh Parsley (to taste) and use some nice crusty bread to dunk right in there!
