Preheat oven to 350 degrees F (180 degrees C) and lightly grease a muffin pan with Coconut Oil (1 Tbsp).

Place Old Fashioned Rolled Oats (1 cup), Bananas (2) rind and juice from Lemons (1 1/3), Farmhouse Eggs® Large Brown Eggs (2), Greek Yogurt (1 cup), Honey (3 Tbsp), Baking Powder (1/2 Tbsp), Baking Soda (1/2 tsp), Vanilla Extract (1 tsp), Salt (1 pinch) in a blender or food processor and pulse until combined, then blend continuously until the mixture is smooth and the oats are almost completely broken down.

Stir in Poppy Seeds (1 Tbsp).

Pour the mixture into the muffin pan, filling each cup 3/4 full.

Bake for 20 minutes, or until a toothpick inserted in the middle of a muffin comes out clean.
