Step 1
Preheat oven to 350 degrees F (180 degrees C) and lightly grease a muffin pan with
Coconut Oil (1 Tbsp)

Place
Old Fashioned Rolled Oats (1 cup)

Bananas (2)
rind and juice from
Lemons (1 1/3)

Large Eggs (2)
,
Greek Yogurt (1 cup)
,
Honey (3 Tbsp)
,
Baking Powder (1/2 Tbsp)
,
Baking Soda (1/2 tsp)
,
Vanilla Extract (1 tsp)
,
Salt (1 pinch)
in a blender or food processor and pulse until combined, then blend continuously until the mixture is smooth and the oats are almost completely broken down.
Step 3
Stir in
Poppy Seeds (1 Tbsp)
.
Step 4
Pour the mixture into the muffin pan, filling each cup 3/4 full.
Step 5
Bake for 20 minutes, or until a toothpick inserted in the middle of a muffin comes out clean.
Step 6
Allow to cool in the muffin pan on a cooling rack for about 15 minutes before turning out.
