Cooking Instructions

Step 1
Preheat oven to 350 degrees F (180 degrees C) and lightly grease a muffin pan with Coconut Oil (1 tablespoon).
Step 2
Place Old Fashioned Rolled Oats (1 cup), Banana (2), rind of a Lemon (1), Lemon Juice (4 tablespoon), Large Egg (2), Greek Yogurt (1 cup), Honey (3 tablespoon), Baking Powder (1 1/2 teaspoon), Baking Soda (1/2 teaspoon), Vanilla Extract (1 teaspoon), Salt (1 pinch) in a blender or food processor and pulse until combined, then blend continuously until the mixture is smooth and the oats are almost completely broken down.
Step 3
Stir in Poppy Seeds (1 tablespoon).
Step 4
Pour the mixture into the muffin pan, filling each cup 3/4 full.
Step 5
Bake for 20 minutes, or until a toothpick inserted in the middle of a muffin comes out clean.
Step 6
Allow to cool in the muffin pan on a cooling rack for about 15 minutes before turning out.
