Cut Bacon (5 lb) into 1-in to 1.5-inch slices.

Mix the Maple Syrup (1 cup) and Honey (2 2/3 Tbsp) together in a bowl. In a separate bowl, mix the Pink Peppercorns (3 Tbsp), Black Peppercorns (3 Tbsp), Ground Coriander (1/2 cup) and Salt (2 tsp) together.

Slather both sides of bacon with maple and honey mixture. Generously sprinkle the spice mixture over the bacon to ensure even layering.

Place the tray in the center of the oven and bake for 20 minutes. You should smell caramelization happening from your kitchen.

After 20 minutes, flip the bacon and cook for additional 15 minutes. If you like yours extra caramelized, keep in an additional 5-7 minutes. Do not keep opening the oven.

After cooked, let it cool. There will be a glasslike sheen on the bacon which says you mastered the candied bacon. You can either skewer or lay them on a platter to serve. Enjoy!
