Combine the prepared Green Plum (2 cup) and Seedless Cucumber (1 cup) in a bowl with Extra-Virgin Olive Oil (2 tablespoon), Lemon (1/2), Salt (1 pinch) and Freshly Ground Black Pepper (1 pinch) and torn Fresh Mint (1 handful) and Fresh Basil (1 handful). Toss to combine and allow to marinate while you prepare the dressing.
Combine Tahini (1/4 cup), Olive Oil (2 tablespoon), Honey (2 tablespoon), juice of one Lemon (1) and Water (2 tablespoon) with a pinch of Salt and Pepper (to taste) in a medium bowl.
Whisk to blend, adding a small bit of water as needed to achieve a smooth but creamy dressing consistency.
Reserve a bit of the dressing in a small bowl for serving and toss the rest of the dressing with the Dry Wheat Berries (3 cup).
To serve, fill bowls with prepared wheat berries, top with marinated plum & cucumber salad and garnish with Purslane (to taste) or other seasonal green - add more dressing over the top as desired.
