Step 1
Preheat oven to 350 degrees F (180 degrees C).
Step 2
Spread Sweet Potatoes (2 cups) on parchment covered baking sheet and drizzle with olive oil. Bake sweet potato for 25 minutes.
Step 3
Remove sweet potato from oven and let cool. Once cooled, add Sweet Potatoes to a blender or food processor and blend with Garlic (1 clove) , Lemon Juice (2 Tbsp) , Chickpeas (1 cup) , Extra-Virgin Olive Oil (2 Tbsp) , Tahini (2 Tbsp) , and Sea Salt (1/2 tsp) until smooth and creamy.
