Step 1
Preheat the oven to 350 degrees F (180 degrees C).
Step 2
Butter the 18 centimeter springform with
Coconut Butter (1/4 tsp)

Mix together
Almond Flour (1 cup)
,
Salt (1 pinch)
, and
Baking Powder (1 tsp)
until combined.
Step 4
In a separate bowl, whisk together the
Eggs (3)
,
Honey (2 Tbsp)
, and
Lemon (1/2)
.

In a clean bowl, use an electric mixer with clean whisk attachment to beat the Egg Whites until firm.
Step 6
Add
Vanilla Extract (1 tsp)
and
Honey (1 tsp)
. Beat until the egg whites mixture is firm again.
Step 7
Using the spatula, gently fold together egg whites mixture and egg yolks mixture, lifting the mixture up from the bottom. Don't use an electric mixer at this time. Add almond flour mixture with a strainer. Gently fold with the spatula until just combined.
Step 8
Pour the mixture into the springform.
Step 9
Bake for 25-30 minutes until golden and the toothpick comes out clean.
Step 10
Let it cool down a little bit before you take it out of the form. Enjoy!
