Step 1
Chill a mixing bowl in the fridge.
Step 2
Open
Full-Fat Coconut Milk (1 can)
, remove liquid, pat cream dry and scoop into bowl. Beat for less than a minute, until mostly smooth.
Step 3
If desired, add
Powdered Confectioners Sugar (1 tsp)
. Set in fridge.
Step 4
Mash
Bananas (3)
in a bowl.
Step 5
Grind
Oats (1/2 cup)
in blender. Add to banana bowl and mix.
Step 6
Add
Oats (1/4 cup)
,
Oat Flour (1/2 cup)
,
Almond Milk (1/2 cup)
,
Dark Chocolate Chips (1/4 cup)
,
Fine Sea Salt (1/8 tsp)
, and
Vanilla Extract (1/2 tsp)
.
Step 7
Heat griddle to 350 degrees F (180 degrees C) or turn stove top to med-hi. Spray griddle/pan. Pour about 1/4 cup mix for each pancake. Makes a dozen 3" pancakes.
Step 8
Flip after 2-3 mins when entire pancake flips in one piece. Both sides should be golden brown when done-will be slightly mushy from banana.
Step 9
Top with coco whip,
Dark Chocolate Chips (2 Tbsp)
and
Banana (1)
. Add pure maple syrup if desired.
