Chill a mixing bowl in the fridge.
Open Full-Fat Coconut Milk (1 can), remove liquid, pat cream dry and scoop into bowl. Beat for less than a minute, until mostly smooth.
If desired, add Powdered Confectioners Sugar (1 teaspoon). Set in fridge.
Mash Banana (3) in a bowl.
Grind Oats (1/2 cup) in blender. Add to banana bowl and mix.
Add Oats (1/4 cup), Oat Flour (1/2 cup), Almond Milk (1/2 cup), Dark Chocolate Chips (1/4 cup), Fine Sea Salt (1/8 teaspoon), and Vanilla Extract (1/2 teaspoon).
Heat griddle to 350 degrees F (180 degrees C) or turn stove top to med-hi. Spray griddle/pan. Pour about 1/4 cup mix for each pancake. Makes a dozen 3" pancakes.
Flip after 2-3 mins when entire pancake flips in one piece. Both sides should be golden brown when done-will be slightly mushy from banana.
Top with coco whip, Dark Chocolate Chips (2 tablespoon) and Banana (1). Add pure maple syrup if desired.
