Line your crock pot with aluminum foil leaving enough to cover the potatoes completely. Spray aluminum foil with Nonstick Cooking Spray (to taste).
Add Baby Red Potato (2 pound) and cover with Ranch Seasoning Powder Mix (2 tablespoon). Top with Bacon (8 slice), Sharp Cheddar Cheese (2 cup), reserving 1/2 cup of cheese and 1 tablespoon of bacon for the end. Add Fresh Chives (1/4 cup), reserving 1 teaspoon. Cover and close the foil, making sure to seal all openings.
Put the lid on and cook on high heat for 3 to 4 hours, until potatoes are fork-tender.
Add the reserved cheese and bacon then cover and seal again. Cook for an additional 2 minutes to allow the cheese to melt.
Sprinkle with chives and season with Salt and Pepper (to taste). Serve warm right out of the slow cooker, or transfer to a serving plate.
