Step 1
Heat
Vegetable Oil (2 Tbsp)
in a heavy-based deep saucepan over a moderate heat. Add
Garlic (2 cloves)
and fry until golden brown. Remove, drain on paper towel and leave aside but keep the oil!
Step 2
Add
Onion (1)
. Cook and stir for 5 minutes, or until soft.
Step 3
Add
Fresh Ginger (1 Tbsp)
and
Ground Turmeric (1 tsp)
. Cook and stir for 30 seconds, or until fragrant.
Step 4
Add
Chickpeas (2 cans)
,
Brown Lentils (2 cups)
,
Water (1 1/2 cups)
, and
Chicken Stock Cube (1)
. Bring to a boil. Reduce heat, cover, and simmer for 15 minutes, or until the chickpeas have broken down slightly.
Step 5
Serve Dhal topped with crispy garlic,
Red Chili Pepper (1)
, and
Fresh Cilantro (to taste)
. Enjoy!
