Peel Mango (2). Chop about 1/4 and set aside. Puree the rest.
Add mangoes, Brown Sugar (1/3 cup), Red Chili Pepper (1/4 cup), Apple Cider Vinegar (1 tablespoon), Raisins (1 tablespoon), Ground Ginger (1 teaspoon), and Cayenne Pepper (1/4 teaspoon) to a pot and cook on stove top until bubbling, stirring continuously for about 2 minutes.
Alternatively, heat in microwave-safe dish for 1-2 minutes, covered with a paper towel to prevent splattering.
Store leftovers in a sealed container in the fridge for 2-3 weeks. Enjoy!
