Cook the Sweet Potato (1) in a microwave oven in a covered casserole dish with 2 inches of water for 6 minutes until soft. Drain and cool slightly before adding to the salad.

Mix Canola Oil (1/3 cup), Granulated Sugar (4 Tbsp), juice from Lemon (1), Minced Dried Onion (1 tsp), Honey Mustard (1 tsp), Poppy Seeds (1 Tbsp), and Salt (1/4 tsp) and set aside.

Add Fresh Spinach (1 pckg) to a large bowl or platter. Add Fresh Strawberries (2 cups), Fried Onions (1 cup), Dried Cranberries (4 Tbsp), and Walnuts (4 Tbsp). Stir dressing and add just before serving. Enjoy!
