Preheat the oven to 275-300 degrees F (135-145 degrees C).
Stir together Matzo (2) with Sunflower Seeds (1/2 cup), Unblanched Whole Almonds (1/4 cup) , Safflower Oil (2 tablespoon), Brown Sugar (2 tablespoon), Maple Syrup (2 tablespoon),Sea Salt (1/2 teaspoon),and Vanilla Extract (1/4 teaspoon). Spread the mixture in a thin layer on a baking sheet lined with parchment paper.
Bake for 15 minutes, stirring every 5 minutes, until very lightly toasted.
Let cool, break into smaller pieces if any chunks have stuck together and then stir in Coconut (1/4 cup). Serve and enjoy!
