Our favorite copycat Taco Bell menu item from the 80’s! Are you old enough to remember these Taco Bell faves as “Cheese Chilito’s”? OMG, so good! They didn’t quite taste the same as time went on and their named changed to Chili Cheese Burrito- now they have disappeared from the Taco Bell menu completely. This is the healthier version of that.

Chili Cheese Burritio
1 pckg
Trader Joe's® Beef-less Ground Beef
4
Joseph's® Flax, Oat Bran and Whole Wheat Flour Tortilla
1 cup
Enchilada Sauce
to taste
Oil
Vegan Cheese Sauce
1 bag
(16 oz)
Baby Carrots
1/2 cup
Nutritional Yeast
1/3 cup
Canola Oil
1 Tbsp
Garlic Powder

Directions

Step 1
To make cheese sauce, peel and cut Russet Potatoes (3) into medium pieces. Add to large pot with Baby Carrots (1 bag) and 1 cup of water. Cover and boil until soft making sure they don't burn.
Step 2
Drain potatoes and carrots, put into food processor with Nutritional Yeast (1/2 cup) , Canola Oil (1/3 cup) and Garlic Powder (1 Tbsp) . Blend until smooth. Add water if you want a thinner sauce.
Step 3
Heat pre-cooked Trader Joe's® Beef-less Ground Beef (1 pckg) in pan with a little Oil (to taste) for a couple of minutes.
Step 4
Add 1/2 cup beef, 1/2 cup cheese sauce and 1/4 cup of Enchilada Sauce (1 cup) to a Joseph's® Flax, Oat Bran and Whole Wheat Flour Tortilla (4) , fold and heat for 20-30 seconds in microwave.
Step 5
Wrap and enjoy!
