To make cheese sauce, peel and cut
Russet Potatoes (3)
into medium pieces. Add to large pot with
Baby Carrots (1 bag)
and 1 cup of water. Cover and boil until soft making sure they don't burn.
Drain potatoes and carrots, put into food processor with
Nutritional Yeast (1/2 cup)
Canola Oil (1/3 cup)
Garlic Powder (1 Tbsp)
. Blend until smooth. Add water if you want a thinner sauce.
Trader Joe's® Beef-less Ground Beef (1 pckg)
in pan with a little
Oil (to taste)
for a couple of minutes.
Add 1/2 cup beef, 1/2 cup cheese sauce and 1/4 cup of
Enchilada Sauce (1 cup)
Joseph's® Flax, Oat Bran and Whole Wheat Flour Tortilla (4)
, fold and heat for 20-30 seconds in microwave.
