They didn’t quite taste the same as time went on and their named changed to Chili Cheese Burrito- now they have disappeared from the Taco Bell menu completely. This is the healthier version of that.

step 1
To make cheese sauce, peel and cut Russet Potatoes (3) into medium pieces. Add to large pot with Baby Carrots (1 bag) and 1 cup of water. Cover and boil until soft making sure they don't burn.

Drain potatoes and carrots, put into food processor with Nutritional Yeast (1/2 cup), Canola Oil (1/3 cup) and Garlic Powder (1 Tbsp). Blend until smooth. Add water if you want a thinner sauce.

Heat the Vegan Ground Beef (1 pckg) in a pan with a little Oil (as needed) for a couple of minutes.

Add 1/2 cup of beef, 1/2 cup cheese sauce, and 1/4 cup of Enchilada Sauce (1 cup) to a Whole Wheat Tortillas (4) fold and heat for 20-30 seconds in the microwave.
