Combine the Celery (2 stalk), Onion (1/2), Jalapeño Pepper (1), and zest of Lime (1) in a medium bowl.
Add Mayonnaise (1/2 cup), lime juice, and Habanero Hot Sauce (1/2 teaspoon). Stir to combine. Mix in Salt (to taste) and Ground Black Pepper (1/2 teaspoon).
Drain the Canned Tuna Packed in Water (4 can) and flake with a fork.
Add tuna to mayonnaise mixture and stir until combined. Add the Fresh Cilantro (1/2 cup) and mix well. Chill until ready to serve.
Toast or grill the Sourdough Bread (12 slice).
To assemble sandwiches, place toasted bread on a cutting board and add Lettuce (to taste), English Cucumber (1/2), Tomato (1), and Avocado (1). Top with a scoop of the tuna salad and a bit of Fresh Cilantro (to taste). Enjoy!
