Rinse the Bean Sprouts (70 gram) and Chinese Chives (50 gram) and shake through a sieve to remove excess water, set aside.
Step 2
Mix Garlic (1 clove), Light Soy Sauce (2 tablespoon), Dark Soy Sauce (1 tablespoon), Mirin (1 tablespoon), Salt (1/4 teaspoon), and Ground Black Pepper (1 pinch) in a small mixing bowl, set aside.
