In a medium saucepan over medium-high heat, stir together the Fresh Strawberry (4 cup), juice of the Lemon (1/2), Corn Starch (2 1/2 teaspoon), and Salt (1 pinch), stirring until the cornstarch dissolves.
Bring to the boil, stirring constantly. Stir in the Water (1/3 cup). Cover and simmer on a medium-low heat for 10 minutes.
If you want a smooth jam, mash the strawberries with a potato masher until you are happy with the consistency. If you want a chunky jam, don’t mash them at all. Simmer uncovered for another 5 minutes, or until the mixture is thickening.
Take the jam off the heat and stir in the Vanilla Essence (1 teaspoon), Honey (3 tablespoon), and Chia Seeds (2 tablespoon), making sure the seeds are evenly distributed. Let the jam cool for 5 minutes.
Pour the jam into glass jars with airtight lids. Store them in the fridge or freezer. Enjoy!
