Sweet, tart and gooey, these bars are a happy marriage of blondies and raspberry jam — and I love them just as much with my morning coffee as I do for dessert. Made with oats, coconut, and pecans, they have wonderful depth of flavor and texture. Interestingly, the top and bottom layers are made from the same batter

Allow Unsalted Butter (1 cup) to come to room temperature. Preheat oven to 350 degrees F (180 degrees C). Line a 9 x 9 baking dish with parchment paper.
Combine butter and Granulated Sugar (3/4 cup) in a mixing bowl and beat until combined. Then beat in Vanilla Extract (1 tsp).
In a separate bowl, whisk together All-Purpose Flour (2 1/3 cups) and Salt (1/2 tsp). With mixer on low, slowly add flour mixture to butter mixture. Mix until the dough starts to form into a ball.
Press ⅔ of the dough into the bottom of the baking pan and about ¼ inch up the sides of the pan.
Spread the Raspberry Jam (1 cup) over the crust, leaving about a ¼ inch border.
Mix the Dried Fruits (2/3 cup) with the remaining dough. Sprinkle mixture evenly over the jam. Scatter Sliced Almonds (1/4 cup) over crumb topping. Bake in oven for about 45 - 50 minutes until the top begins to turn golden brown.
Cool completely before cutting and serving.
