Put Chia Seeds (1/2 cup) in a bowl, and pour in Unsweetened Almond Milk (1 1/2 cup).
Stir together well.
Add the Coconut Cream (1 can), Unsweetened Shredded Coconut (1/2 cup), Xylitol (1/2 cup), Unsweetened Cocoa Powder (1/4 cup), and Vanilla Extract (1 teaspoon). Mix everything together.
The chia seeds begin to swell in 10 minutes, and make the most wonderful pudding like texture. Allow to soak 15 minutes to 2 hours. It gets thicker the longer it sits.
Serve garnished with Almonds (to taste) and Unsweetened Shredded Coconut (to taste).
