Step 1
Put Chia Seeds (1/2 cup) in a bowl, and pour in Unsweetened Almond Milk (1 1/2 cups) .
Step 2
Stir together well.
Step 3
Add the Coconut Cream (1 can) , Unsweetened Shredded Coconut (1/2 cup) , Xylitol (1/2 cup) , Unsweetened Cocoa Powder (1/4 cup) , and Vanilla Extract (1 tsp) . Mix everything together.
Step 4
The chia seeds begin to swell in 10 minutes, and make the most wonderful pudding like texture. Allow to soak 15 minutes to 2 hours. It gets thicker the longer it sits.
Step 5
Serve garnished with Almonds (to taste) and Unsweetened Shredded Coconut (to taste) .
