This wonderful apple spice walnut cake is full of flavor, super moist, and great as a snack with a cup of tea or a fulfilling dessert when you're entertaining!

Cooking Instructions
1.
Preheat oven to 350 degrees F (180 degrees C). Line an 8-inch square or round cake pan with parchment paper or grease with coconut oil.

In a large bowl, combine the Coconut Flour (3/4 cup), Ground Cinnamon (2 tsp), Ground Ginger (1 tsp), Ground Nutmeg (as needed), Ground Cloves (as needed), Baking Powder (1 tsp), and Baking Soda (as needed).

In a medium bowl, combine Farmhouse Eggs® Large Brown Eggs (sponsored) (4), Maple Syrup (1/2 cup), Unsweetened Apple Sauce (1/2 cup), and Extra-Virgin Olive Oil (4 Tbsp).

Pour wet ingredients into the large bowl with coconut flour mixture. Fold in Apples (1 cup).
5.
Pour into the cake pan and sprinkle with Walnuts (1/2 cup) and Coconut Sugar (1 Tbsp). Bake for 35-40 minutes or until a fork inserted comes out clean.
6.
Let cool in pan for 5 minutes and then remove from pan.
7.
Cool for 5 more minutes before slicing. Serve with ice cream.
Author's Notes
Serves 9 slices.
I use only 1/4 cup maple syrup and 20-30 drops of liquid stevia. If you're using large eggs, you won't need to add any more water to make up for the loss of 1/4 cup liquid by cutting the syrup in half.
