2 pound Lean Ground Beef
1/2 cup Barbecue Sauce
4 tablespoon Barbecue Sauce
1/2 cup Breadcrumbs
1/4 cup diced Onion
1 tablespoon Olive Oil
1/2 teaspoon minced Garlic
1/2 teaspoon Salt

STEP 1
Preheat oven to 350 degrees F (175 degrees C). There is no need to grease the loaf pan.
STEP 2
In a small skillet, heat the Olive Oil (1 tablespoon) and add the Bell Pepper (1/4 cup), Onion (1/4 cup), and Garlic (1/2 teaspoon). Cook until tender and translucent, about 7 minutes. Cool.
STEP 3
Combine Lean Ground Beef (2 pound), Barbecue Sauce (1/2 cup), Breadcrumbs (1/2 cup), Salt (1/2 teaspoon), and Ground Black Pepper (1/4 teaspoon) in a large bowl. Portion into 8 roughly equal amounts. Gently press into the mini loaf mold.
STEP 4
Evenly divide the remaining Barbecue Sauce (4 tablespoon) to top each mini meatloaf.
STEP 5
Bake for approximately 35 minutes.
STEP 6
Remove from oven, and let rest for 5 minutes. Pour off the excess fat.
STEP 7
Serve hot. Enjoy!
