Step 1
Preheat the oven to 400 degrees F (200 degrees C).
Step 2
Season
Skinless Cod Fillets (1 lb)
with
Salt (1/4 tsp)
and
Cajun Seasoning (1/4 tsp)
. Set aside.
Step 3
In a small bowl, mix together
Butter (1/4 cup)
,
Olive Oil (1 Tbsp)
, 1 Tbsp of
Lemon (1)
,
Garlic (2 cloves)
, 1/2 Tbsp of Lemon Zest,
Fresh Parsley (2 Tbsp)
, and
Cajun Seasoning (1/4 tsp)
.
Step 4
Place
Lemon (1)
and cod fillets on the baking dish. Top each fillet with about 1 Tbsp of the garlic butter mixture. Bake for 10-12 minutes or until the fish is opaque or flakes easily.
Step 5
Serve warm with salad or any preferred vegetable side dish, if desired.
