Author's Notes

You can make your own oat flour by putting 3-4 cups of oats into a blender or food processor and blitzing until very fine like flour.

Cooking Instructions

Step 1
Place Oat Flour (2 1/2 cups) , Baking Powder (1 tsp) , Baking Soda (1 tsp) , Protein Powder (1 scoop) , Non-Dairy Milk (2 cups) , and Fresh Blueberries (1 cup) into a high power blender. Blitz until smooth and creamy.
Step 2
Heat a frypan or skillet over medium heat and melt Coconut Oil (2 Tbsp) . Pour approximately 1/4 cup pancake mix into the pan.
Step 3
Flip when soft bubbles begin to form on top. If the pancakes are burning too quickly, turn the temperature down and cook more slowly.
Step 4
Enjoy with all your favorite toppings. I topped mine with blueberries, coconut whipping cream, dark maple syrup, and cinnamon.
