Step 1
Preheat oven at 425 degrees F (220 degrees C).
Step 2
In a pan, sweat the
Onion (1/2)
,
Garlic (2 cloves)
,
Long Green Peppers (1/4)
, and
Red Chili Pepper (1/4)
with
Vegetable Oil (as needed)
until soft.
Step 3
When the vegetables are soft, add the
Canned Tuna (1 cup)
and leave to cook for 10 to 15 minutes then leave to cool.
Step 4
In a large bowl, add the
Mashed Potatoes (1 1/2 cups)
,
Fresh Chives (2 Tbsp)
,
Dried Parsley (2 Tbsp)
,
Dill Pickles (1 Tbsp)
, and the cooled tuna.
Step 5
Season with
Salt (1/2 Tbsp)
and
Ground Black Pepper (1/2 tsp)
and mix well with a wooden spoon and then with your hands as if kneading.
Step 6
When the mix is well combined start to make the croquettes shaping as your preference.
Step 7
Pass each croquette through the
Free Range Egg (2)
and then through the
Breadcrumbs (to taste)
.
Step 8
Place in a well buttered baking tray.
Step 9
When all the mix has been used, place the tray in the oven for 30 minutes or until golden brown.
