Step 1
Prepare the Mangoes (7) and Pineapple (1) .
Step 2
Coarsely crumble the Chocolate Chip Cookies (24) .
Step 3
Mix Self-Rising Flour (2 cups) with Eggs (10) , Vanilla Extract (1 Tbsp) and Granulated Sugar (3/4 cup) and enough Milk (to taste) to make a pancake-like batter.
Step 4
Do not overmix the batter.
Step 5
Saute the diced pineapple with Butter (1/2 stick) .
Step 6
Saute until lightly caramelized.
Step 7
Add the mangoes and Corn Starch (1/3 cup) , mix well but carefully so as not to mash-up the fruit.
Step 8
Add the cookies.
Step 9
Add the batter.
Step 10
Mix gently.
Step 11
Preheat your oven to 395 degrees F (200 degrees C).
Step 12
Fill into two preheated baking dishes, top with Butter (to taste) flakes, bake in the preheated oven until cooked through, about one hour, depending on the moistness of the fruit.
Step 13
Once done, sprinkle generously with Caster Sugar (to taste) .
Step 14
Serve and enjoy!
