Raw Unsalted Cashews , soaked
1/2 cup
Water
1/4 tsp
Garlic Powder
1/4 tsp
Ground White Pepper
3/4 cup
Vegan Mayo

Author's Notes

Note: Unlike the Ruffle’s onion dip, this dip will need to be refrigerated when you aren’t dipping. Pro tip: It’s even better the next day! So, if you’re having a party on Saturday, make this on Friday!

Directions

Step 1
In a saute pan over medium heat add Olive Oil (2 Tbsp) , heat and add Onions (1 1/2 cups) , and Sea Salt (1/4 tsp) .
Step 2
Cook the onions until they are caramelized, about 20 minutes. Remove from heat and set aside to cool.
Step 3
Drain & rinse the Raw Unsalted Cashews (1 1/2 cups) well. Blend with Sea Salt (1/2 tsp) , Water (1/2 cup) , Lemon Juice (1 tsp) , Vegan Mayo (3/4 cup) , Garlic Powder (1/4 tsp) , and Ground White Pepper (1/4 tsp) .
Step 4
Mix in the cooked onion or blend on slow speed.
Step 5
Refrigerate and stir again before serving. Serve with potatoes chips of your choosing and enjoy!
