Cooking Instructions
1.
Preheat your oven to 350 degrees F (180 degrees C).
2.
In your mixing bowl, add in Unsalted Butter (1/2 cup) and Granulated Sugar (1/2 cup), cream on high for about a minute.
3.
Add in Vegetable Oil (2 Tbsp), beat on high until homogeneous, scrape down if needed.
4.
Add in Vanilla Extract (2 tsp).
5.
Add in Eggs (2), one at a time on medium speed.
6.
Add in Milk (1/3 cup) and mix on high until homogeneous.
7.
In another bowl, whisk in dry ingredients, All-Purpose Flour (1 1/2 cups), Unsweetened Cocoa Powder (2 Tbsp), Baking Soda (as needed) and Baking Powder (2 tsp) together.
8.
Add the dry ingredients into the batter, mix on low until just combine.
9.
Fold in White Chocolate Chips (1/2 cup) and Milk Chocolate Chips (10 tsp). Don't over mix!
10.
Transfer it onto your muffins pan with liners using an ice cream scoop.
11.
Drop the pan lightly a few times to release the air bubbles.
12.
Bake it in the oven for 25 - 30 minutes or until golden brown, toothpick inserted in the center comes out clean.
13.
Let it cool in the pan for at least 15 minutes transfer to a wire rack.
Author's Notes
For cakes and muffins, it is best to use ingredients that are at room temperature. Scraping as often as needed helps to mix evenly.
