Step 1
Preheat the oven at 400 degrees F (200 degrees C) in convection mode.
Step 2
Prepare the sauce: crush
Long Green Peppers (2)
and
Fresh Basil Leaves (5)
. Add
Vietnamese Spice Blend (1/2 Tbsp)
,
Fish Sauce (1 tsp)
,
Lime (1/4)
, and
Cooking Oil (1 Tbsp)
. Mix well.
Step 3
Cut slits in the side of the
Mackerel (1.3 lb)
and spoon the sauce into the cuts.
Step 4
Spread
Fresh Basil (5 cups)
on aluminum foil, then put fish on top of the basil bedding. Pour the leftover sauce over the fish. Cover the fish with another layer of basil, then wrap the foil.
Step 5
Put the wrapped fish into the preheated oven and cook for 15 minutes.
