Preheat oven to 350 degrees F (180 degrees C).
in foil and bake them in the preheated oven for about 1 hour. Cooking time depends on the size of the potatoes. If a fork goes in smoothly, they're done.
Cut them in half and carve out the potatoes, transferring the white part to a bowl for mashing. Try not to destroy the skins since you will be refilling them.
Set the shells aside.
To the bowl with the potatoes, add the
Unsalted Butter (2 Tbsp)
Milk (2/3 cup)
Salt and Pepper (to taste)
. Mash until smooth.
To the shells, distribute the vegetables. I like to do half
Green Peas (1 cup)
Corn (1 cup)
Transfer the mashed potatoes on top of the shells.
Top with Ground Black Pepper ( to taste),
Shredded Cheese (2 handfuls)
and some chopped
Scallions (1 stalk)
Bake until the cheese melts and browns a little bit.
