Author's Notes

Instead of baking, you could also microwave the potatoes for 10-15 minutes. Be sure to poke a bunch of holes in them with a fork before microwaving and DO NOT wrap them in foil!

Cooking Instructions

Step 1
Preheat oven to 350 degrees F (180 degrees C).
Step 2
Wrap your Potato (8) in foil and bake them in the preheated oven for about 1 hour. Cooking time depends on the size of the potatoes. If a fork goes in smoothly, they're done.
Step 3
Cut them in half and carve out the potatoes, transferring the white part to a bowl for mashing. Try not to destroy the skins since you will be refilling them.
Step 4
Set the shells aside.
Step 5
To the bowl with the potatoes, add the Unsalted Butter (2 tablespoon), Milk (2/3 cup), Salt and Pepper (to taste). Mash until smooth.
Step 6
To the shells, distribute the vegetables. I like to do half Green Peas (1 cup) and half Corn (1 cup).
Step 7
Transfer the mashed potatoes on top of the shells.
Step 8
Top with Ground Black Pepper ( to taste), Shredded Cheese (2 handful) and some chopped Scallion (1 stalk).
Step 9
Bake until the cheese melts and browns a little bit.
Step 10
Serve and enjoy!
