Author's Notes

Instead of baking, you could also microwave the potatoes for 10-15 minutes. Be sure to poke a bunch of holes in them with a fork before microwaving and DO NOT wrap them in foil!

Preheat oven to 350 degrees F (180 degrees C).

Wrap your Potatoes (8) in foil and bake them in the oven for about 1 hour. Cooking time depends on the size of the potatoes. If a fork goes in smoothly, they're done.

Cut them in half and carve out the potatoes, transferring the white part to a bowl for mashing. Try not to destroy the skins since you will be refilling them. Set the shells aside.

To the bowl with the potatoes, add the Unsalted Butter (2 Tbsp), Milk (2/3 cup), Salt (to taste), and Ground Black Pepper (to taste). Mash until smooth.

To the shells, distribute the vegetables. I like to do half Green Peas (1 cup) and half Corn (1 cup).

Transfer the mashed potatoes on top of the shells.

Top with Ground Black Pepper ( to taste), Shredded Cheese (2 handfuls) and some chopped Scallion (1 stalk).

Bake until the cheese melts and browns a little bit. Serve and enjoy!
