Panko Breadcrumbs

Ground Black Pepper

Nonstick Cooking Spray
Cooking Instructions
1.
Preheat oven to 400 degrees F (200 degrees C).
2.
Line two baking sheets with foil, and spray with Nonstick Cooking Spray (as needed).
3.
Place 1/4 thick slices of Zucchini (3 1/2 cups) in a plastic bag with Olive Oil (1 Tbsp) and shake to coat evenly.
4.
In a wide bowl or plate, combine Panko Breadcrumbs (4 Tbsp), Parmesan Cheese (4 Tbsp), Kosher Salt (as needed), and Ground Black Pepper (to taste).
5.
Place zucchini rounds in the bread crumb mixture, coating both sides, and pressing the mixture onto the rounds.
6.
Place rounds in a single layer on the baking sheet, and sprinkle with remaining bread crumb mixture.
7.
Bake 22-27 minutes, until golden brown.
8.
Serve, and enjoy!
