In a jug, combine Milk (1 cup) and Active Dry Yeast (2 tsp). Mix and let it foam up for 5 to 10 minutes.

In the bowl of your stand mixer fitted with a hook attachment, add Mashed Potatoes (1 cup), the yolks of the Large Eggs (3), Butter (1/3 cup), and milk mixture when ready.

Add All-Purpose Flour (4 1/4 cups), Granulated Sugar (1/3 cup), and Salt (2 tsp). Mix on low speed until it forms a dough. Increase the speed to medium high and let it knead for 5 to 7 minutes.

Form the dough into a ball, place it on an oiled bowl and brush the top with oil. Cover with plastic wrap or aluminum foil. Place the dough somewhere warm for 1 hour and 30 minutes to 2 hours or until it has risen.

Preheat oven to 375 degrees F (190 degrees C).

Once the dough has risen, place it on your work surface, cut the dough into 12 equal pieces or 16 if you want smaller buns. Form each piece of dough into a round ball. Place them in a 13x9 inch baking dish that’s been greased.

Cover the rolls and allow to rise again for 45 minutes to 1 hr, really depends on how hot the environment is.

Bake them for 20 minutes or until golden brown on top.

Brush them with Butter (to taste). Allow to cool before serving. Enjoy!
