Cooking Instructions
1.
Divide Red Bean Paste (300 gram) into 50 g portions and shape them into thin strips with a plastic foil, slightly shorter than the size of the taiyaki.
2.
In a bowl, add the Pastry Flour (150 gram), Baking Soda (3 gram), and Baking Powder (3 gram) altogether and whisk a few times.

In a separate bowl, beat the Egg (1). Add Water (80 gram), Milk (80 gram), Granulated Sugar (15 gram), and Salt (1 pinch). Mix well with a whisk.

Add the egg mixture to a bowl of flour a little at a time with a whisk to prevent lumps. Finally, add Frying Oil (1 teaspoon) and mix until just combined. Be careful not to overmix.

Start heating a taiyaki pan on the gas stove over medium-low heat. Don’t apply any oil to a pan.

Once you turn the heat, immediately start pouring one and a half tablespoons of batter on one side of the pan. Spread the batter evenly with the spoon.
7.
Quickly turn the pan, and pour one and a half tablespoons of the batter evenly on the other side.
8.
Add the Anko bean paste from Step 1 in the middle. Pour a little less than 1 Tbsp of the batter on top of it. All of these processes should be done very quickly.
9.
Close the pan and heat both sides over low heat. Move the pan around over the heat to get all parts brown evenly.
10.
Open the pan and check the color. If both sides are well brown, it is done! Cook the rest of the batter in the same way. Enjoy them warm for the best flavor!
Author's Notes
This recipe uses Shirakiku® Koshi an (Fine Sweetened Red Bean Paste).
Anko (red bean paste) can be replaced with thick vanilla custard or chocolate-based cream such as Nutella.
