Store all of the ingredients in separate containers. They will keep fresh in the fridge for 3-4 days. The chicken can also be frozen for about 3 months if kept in an airtight container or freezer-safe bag. Reheat in the microwave for 1-2 minutes.

Preheat the oven to 375 degrees F (190 degrees C).

Begin by marinating the Chicken Breast (1 lb) in Olive Oil (2 Tbsp), Lemon Juice (1/2), Garlic (2 cloves), Ground Allspice (as needed), Paprika (2 tsp), Ground Nutmeg (as needed), Ground Coriander (as needed), and Mediterranean Spices (1 tsp) for at least 30 minutes.

While the chicken is marinating, slice Red Onion (1) and Bell Peppers (2). Add them to a sheet pan and season with Olive Oil (2 tsp), Salt, and Ground Black Pepper (as needed) to taste. Place the chicken on the sheet pan with the vegetables.

Dice Tomato (1) and Cucumber (1). Add them to a bowl and mix together with Salt (as needed).

Make yogurt sauce by mixing the Plain Yogurt (1/2 cup) with Lemon Juice (1/4), Garlic Powder (as needed), and Dried Dill Weed (1 tsp). Store in the fridge until ready to assemble the pitas.

Cut tops off of Pita Pockets (to taste) and stuff with 1/4 cup diced chicken and veggies. Top with the yogurt sauce and Hot Sauce (to taste) and serve.
