Granola will keep for up to a week, stored in a sealed container, at room temperature.

Preheat the oven to 300 degrees F (150 degrees C) and line a sheet pan with parchment paper.

In a large mixing bowl, combine the Old Fashioned Rolled Oats (2 1/2 cups), Almonds (1 cup), Walnut (1 cup), Pepitas (1/3 cup), Sesame Seeds (3 Tbsp), and Kosher Salt (1 tsp).

Add the Olive Oil (1/3 cup) and mix until the ingredients are well-coated.

Then, add the Honey (1/3 cup) and mix again.

Bake for 50 minutes, tossing once halfway through until the oats are golden brown.

Add the Dried Fruit Mix (1 cup), toss, and spread the granola into an even layer, packing it down with a spatula or wooden spoon. Sprinkle lightly with kosher salt and set aside until completely cool.

Break the granola into pieces, then transfer it to an airtight container, being careful not to break up the clumps.
