Preheat the oven to 350 degrees F (180 degrees C). Line a 9x9 square pan with aluminum foil or parchment paper, and set aside.
Using a hand-held mixer or a stand mixer, cream together the
Butter (2 sticks)
Granulated Sugar (1/2 cup)
Vanilla Extract (1 tsp)
All-Purpose Flour (2 cups)
Salt (1/2 tsp)
and mix until well combined.
Pat the dough into the bottom of the prepared pan. Bake in the oven for 15 minutes.
In a bowl, whisk together
Large Eggs (3)
Granulated Sugar (1 1/4 cups)
, 2/3 cup of
Lemon Juice (3)
, and lemon zest until well blended. Whisk in
All-Purpose Flour (1/2 cup)
and mix until the flour is well incorporated.
Pour this mixture into the shortbread, and bake for 25 minutes.
Remove from the oven and allow to cool completely at room temperature then place in the fridge for at least 1 hour.
When ready to serve, cut them into squares and sprinkle with
Powdered Confectioners Sugar (to taste)
