Cooking Instructions

Step 1
Preheat the oven to 350 degrees F (180 degrees C). Line a 9x9 square pan with aluminum foil or parchment paper, and set aside.
Step 2
Using a hand-held mixer or a stand mixer, cream together the Butter (2 sticks) , Granulated Sugar (1/2 cup) , and Vanilla Extract (1 tsp) until fluffy.
Step 3
Add All-Purpose Flour (2 cups) and Salt (1/2 tsp) and mix until well combined.
Step 4
Pat the dough into the bottom of the prepared pan. Bake in the oven for 15 minutes.
Step 5
In a bowl, whisk together Large Eggs (3) , Granulated Sugar (1 1/4 cups) , 2/3 cup of Lemon Juice (3) , and lemon zest until well blended. Whisk in All-Purpose Flour (1/2 cup) and mix until the flour is well incorporated.
Step 6
Pour this mixture into the shortbread, and bake for 25 minutes.
Step 7
Remove from the oven and allow to cool completely at room temperature then place in the fridge for at least 1 hour.
Step 8
When ready to serve, cut them into squares and sprinkle with Powdered Confectioners Sugar (to taste) .
