Mix Oats (3 1/2 cups), Roasted Almonds (2/3 cup), Dried Cranberries (3/4 cup), Currants (1/4 cup), and Cake Flour (2/3 cup) in a large bowl and stir to combine.

Put Unsalted Butter (3/4 cup), Brown Sugar (3 Tbsp), Caster Sugar (1/2 cup), and Honey (8 tsp) in a glass bowl and set over a pot of simmering water. Stir until sugar is melted. Alternatively, use microwave to warm, 1 minute at a time, stirring until sugar is melted.

Preheat the oven to 180 degrees C (350 degrees F) steam bake function and line a 25x25x4 cm tin with baking paper.

Carefully pour wet ingredients into the dry ingredients and mix well.

Pour mixture into the prepared tin. Smooth top with the back of a spoon. Sprinkle Desiccated Coconut (4 Tbsp) on over top evenly.

Bake on shelf 3 (middle of the oven) for 25 minutes. Remove from the oven and transfer to a wire rack to cool.

When cooled, slice into squares and serve.
