Turn the oven to Broil Lo. Line a baking sheet with parchment paper or foil.

Line the Fresh Mussels (12) up on the baking sheet.

In a small bowl, combine the Mayonnaise (3 Tbsp), Cayenne Hot Sauce (1 Tbsp), Honey (1 tsp), Grated Parmesan Cheese (1 Tbsp), and Blue Cheese (2 Tbsp). Make sure to fully mix in the blue cheese.

Spoon a heaping tsp of mixture onto each mussel.

Broil on the upper rack for 5-7 minutes, or until they are golden and bubbling.

Serve warm, garnished with a sprinkle of Scallion (1/4 cup).
