Author's Notes

Yields 12-15 servings.

Place leftover lasagna in an airtight container and refrigerate for up to 5 days. Reheat either in the oven or in the microwave until warm.

To freeze, let the lasagna cool completely and then cut into individual servings, place in freezer-safe airtight containers and mark them with the date. The lasagna will keep in the freezer for up to 3 months.

In a large skillet or Dutch oven, cook Italian Sausage Links (2 lb) until brown. Add Garlic (4 cloves) and cook for 1 minute. Drain the sausage of any liquid or grease that may have accumulated.

Add Marinara Sauce (3 jars) and Season with Salt (to taste), Ground Black Pepper (to taste), and Italian Seasoning (1 Tbsp). Simmer for about 5 minutes and remove from heat.

Prepare the cheese filling. In a medium bowl, mix Whole Milk Ricotta Cheese (1 3/4 cups), Shredded Italian Blend Cheese (2 cups), Italian Seasoning (1 Tbsp), and Fresh Parsley (1/3 cup), stirring until fluffy and well blended.

Spray the bottom and sides of a large crock pot with Nonstick Cooking Spray (as needed). Begin layering, starting with the sauce. Pour 2-3 cups of sauce on the bottom of the slow cooker, making sure that the entire bottom is covered with sauce.

Add a single layer of Lasagna Noodles (15) to cover the sauce, breaking the noodles as necessary to make them fit.

Add a thin layer of Cheese Filling on top of the lasagna noodles. You can use a spoon or your fingers to do this easily without disturbing the layer of noodles. Generously sprinkle a layer of Shredded Mozzarella Cheese (6 cups) on top of the Italian Sauce.

Repeat these layers until all ingredients are used and it fills your crock pot. (Italian Sauce, noodles, cheese filling, shredded mozzarella), ending with a layer of shredded mozzarella cheese on top.

Cover and cook on low for 4-5 hours, or until the noodles are soft, being careful not to overcook. Resist the urge to lift the cover to check on progress during this period. Keep it covered as constantly as possible to retain heat and moisture for the best results.

After 4 hours, test for doneness! Remove the cover and stick a table knife in the center if it is tender all the way through to the bottom, the edges are golden brown, and the top of the lasagna is hot and bubbling, you’ll know you’re getting close!

Sprinkle with 1 cup of reserved mozzarella cheese. Cover with the lid and keep covered until the cheese is melted.

Once the final layer of cheese is melted, keep covered and allow to sit for 30 minutes before serving.
